Spice Up Your Snacking With Texas Caviar

Homemade Texas Caviar Dip

We’re completely hooked on Texas Caviar, not just during the summer but all year round. It’s easy to whip up, just taking about 5 minutes to prepare. It’s a refreshing, filling, and satisfying dish that wins the hearts of everyone who tries it. Whether served as a side dish or snack, it never fails to please — perfect for kids and party-goers alike. 🙂

I first learned about Texas Caviar through a work event many moons ago while I was working with the American Cancer Society. We were all asked to bring a dish to share during a team gathering and my teammate, Andrea, brought Texas Caviar. I remember thinking how odd the name was (Caviar? Texas?), but our team polished it off in 15 minutes flat. Naturally, I asked Andrea for the recipe (which led me to compile and create a recipe book of our ASC team’s favorites, but that’s a story for another day ;-)). From that point on, I knew this dish would be a beloved staple in our home for years to come.

Here’s a charming video from my past, featuring a 2-year-old Derek (who’s now 15…it feels like a lifetime ago!). Notice his enthusiasm for trying out each ingredient and then wanting to dive in at the end. 🙂

And without further ado, here’s the recipe:

Texas Caviar

Ingredients:

*Use organic ingredients whenever possible. 

  • 1 can of black beans, drained
  • 1 can of diced tomatoes
  • 2 cups of salsa
  • 2 ripe avocados
  • Juice from 1 lime
  • 1 package of frozen corn or a can or corn (or use fresh corn if you can!)
  • 1 bunch of cilantro, chopped
  • 1 jalapeno, chopped (omit if you don’t like a bit of spice)
  • 1 can of chopped black olives

 

Directions:

  • Mix all ingredients together in a large bowl.
  • Serve with tortilla chips! It’s also great over or with eggs.
